Habisa Ghanta Tarakari - Panchuka Odia Mixy curry without Onion & Garlic ,ଘାଣ୍ଟ ତରକାରୀ(ବିନା ପିଆଜ ରସୁଣ)

INGREDIENTS :-

  • Papiya(ଅମୃତଭଣ୍ଡା)- 200 gm
  • Beans(ବିନ) – 80 gm
  • Drumstick(ସଜନା ଛୁଇଁ)- 60 gm
  • Brinjal(ବାଇଗଣ)- 175gm
  • Ridge Gourd(ଜହ୍ନି)- 130 gm
  • Cabbage(ବନ୍ଧା କୋବି)- 150 gm
  • Yam(ମାଟି ଆଳୁ) – 100 gm
  • Pumpkin(କଖାରୁ)-100gm
  • Radish(ମୂଳା)- 100 gm
  • Runner Beans(ବାରବଟି) -100 gm
  • Potato(ଆଳୁ) -150 gm
  • Tomato (ବିଲାତି)– 100gm
  • Chick Peas(କାବୁଲି ଚଣା)-50 gm
  • Badi – 25 gm
  • Coriander Leaves(ଧନିଆ ପତ୍ର)- 25 gm
  • Ginger(ଅଦା)– 25 gm
  • Refined Oil– 100 gm
  • Turmeric Powder(ହଳଦୀ ଗୁଣ୍ଡ)- 1 tsp
  • Pancha Phutan - 4 tsp
  • Dry Chili(ଶୁଖିଲା ଲଙ୍କା) – 1 or 2( as per taste)
  • Bay Leaf(ତେଜ ପତ୍ର)- 2 pcs
  • Cumin seed(ଜୀରା)- 1tsp
  • Curry Powder(ତରକାରୀ ମସଲା) – 2tsp
  • Chili Powder(ଲଙ୍କା ଗୁଣ୍ଡ)- 1tsp
  • Salt(ଲୁଣ) – as per taste


PREPARATION :

  • Soak the chick peas in water for 4 hrs. Boil them after it.
  • Cut the vegetables into medium small pieces( cabbage, potato, radish , papaya, beans, brinjal, ridge gourd, Yam, pumpkin, runner beans, tomato). Cut the drumstick into 2 inch long pieces.
  • Make a paste of cumin seeds and garlic.
  • Heat oil in a deep pan, fry the badi s till it turns golden brown, take out from oil and keep aside.
  • Add pancha phutan, dry chili and bay leaf to the oil. When it s starts spluttering add masla paste . Fry it for 1, 2 mins.
  • When the masala turn golden brown add the cut vegetables except tomato and drumstick. Add the boiled chick peas. Stir well.
  • Put turmeric powder, curry powder, chili powder and salt to taste. Stir it properly and cover it. Stir it in low flame.
  • When the vegetables are half cooked ,add tomatoes and drumstick . Cover it and cook it till the vegetables are well cooked.
  • Crushed the fried badi’ s and add it to the curry .Garnish with coriander leaves and remove from flame. Serve with rice or roti.
