RICE FLOUR PARATHA by Adyasha Padhi
- Rice flour – 1 cup
- Salt – 1/4 tsp (to taste)
- Chillie powder – 1/2 tsp(or to taste for spiciness)
- Oil – 2 tbsp
- Ghee/Oil – To make paratha
1)To prepare the dough of rice flour, pour 1 1/4 cup.
2)Keep 1/4 cup separately and take 1 cup water in a utensil and set to boil.
3)Add salt,chilli powder and 2 tsp oil in boiling water,set on a low flame.Now add the rice flour and mix,turn off the gas.
4)Cover the dough and keep aside for 5 minutes so that it becomes soft.
5)Now put the dough in a big bowl and knead thoroughly till the dough is similar to that of chapati.
6)Cover the soft dough and set aside for 15-20 minutes allowing it to ferment.
7)The rice dough is ready to prepare Chaula atta paratha.Place a pan on the gas to heat.Break a lemon sized piece from the dough and shape it into a ball.
8)Apply dry flour on the dough piece then expand it a bit by keepin it on a board and pressing with your hand.
9)Apply some more dry flour then gently roll the paratha as you press its edges.
10)Carefully pick up the paratha and place on the heated pan. When the paratha is cooked on the lower surface we will turn it over.
11)We can press the paratha gently with a ladle,cook till brown spots appear on it.
12)Add 1/2 tsp ghee to the pan n cook paratga till it turns light brown on both sides.Take out cooked roti on a bowl on a plate or a plate covered with aluminium foil.
13)Similarly cook all the parathas.Rotis can be made with the same dough.
How to make Masala Rice flour:
- To make Masala Rice Flour Paratha/Roti we need
- rice flour,
- 1/2 tsp jeera(cumin seeds),
- 1 finely chopped green chilly,
- half-inch long piece(grated) ginger,
- 1 tbsp green coriander(finely chopped) and
- if you prefer onion then finely chop 1/2 of it for use.
When the flour is put in boiling water,add all of the above mentioned spices too.Now in the similar manner,knead the flour thoroughly till a soft and smooth dough is formed.Masala Rice flour Roti/Paratha is prepared, serve with chutney,pickle and any of your favourite curries.
