This is one of the most traditional dish of western Odisha . First time I had this in a forest area… because that people don’t have much ingredients to cook. Bamboo shoot grew in hilly regions,then this can be stored for more than one year,so it’s act like staple food. Every year this was made by cutting the bamboo sprouts.
This is one of the easiest and delicious recipe.The bamboo shoots add the special flavour this dish.
Recipe of Bhendi karadi chutchta:
1- Ladyfinger (10pcs)(Cut into small pieces)
2- Refined oil (One tbps)
3- Bamboo shoot (Baunsa karadi- 2 tbps)
4- Tomato (2)
5- Mustard paste/Besara(Mustard seeds 1tbps,Red dry chillies 1pcs and 4 garlic cloves)
6- Turmeric powder 1/2tsp
1- Add one tablespoon in a frying pan.
2- Add the lady finger and karadi fry it for a minute then add the tomatoes and fry it for another 5 minutes in high flame.
3- Add the salt and turmeric powder (mixed it well)
4- Just after that add the mustard paste (Besara) , give it a good mix.
5- Add one cup of water and boiled it for 5 minutes in high flame.
(It’s absolutely ready to have,you can have it with steam rice).
