Amalu (56 bhogha of Lord Jagannath) –  Sandhya Dhupa Bhoga recipe #Food #Odisha #jagannath

Amalu is used in Sandhya Dhupa (Evening meal at 7.00 to 8.00 pm) – Article by Adyasha Padhi

After the evening Arati, Sandhya Dhup Bhog is offered. This Arati is also called as Jaya Mangal Arati. Items are also prepared on request of devotees. The following items are presented for this Bhog.


  • Chipuda Pakhal – 14 Oli
  • Sana Oli Pakhal – 2 Oli
  • Kanar Puli – 3 Oli
  • Hata Poda Amalu – 7
  • Sana Amalu – 83
  • Pani Pakhal – 23 Oli
  • Sakara – 5 Oli
  • Math Puli – 22
  • Bada Amalu – 21

Ingredients Amalu :-

For Amalu:
1. Maida – 1 cup
2. Sooji / Semolina – 1 cup
3. Sugar – 1/2 cup & salt 1/2 teaspoon
4. Mouri / Fennel Seeds – 1/2 tsp
5. Milk (according to thickness)
6.Chopped coconut
7. Khoya Kheer Or Mawa grated 1/2 cup
8. Baking Powder 1/4 teaspoon
9.White oil to fry

For Sugar Syrup:

1. Sugar 1 cup
2. Water 1/2 cup
3. Cardamom pods 2-3
4. Saffron Strands 5-6
5.Cooking Time – 0.30 Hrs

Procedure to Prepare Amalu – Recipe for Mahaprasad , chhapan Bhoga of lord Jagannath , “Amalu “
For Syrup:

  • Take a saucepan and add all the ingredients under the heading of syrup and bring mixture to a boil.
  • After boiling 5 minutes off the oven and let the syrup cool to the room temperature
  • For Amaalu:
  • First mix all the dry ingredients(maida,sooji,khoya kheere,sugar,salt,mouri,baking powder & coconut) together in a bowl.Now add milk to make a batter not so thik not so thin like pancake batter .
  • Keep the mixture in room temperature for about 15 minutes.
  • Then take a flat non stick pan and heat oil and pour one big spoon at a time and fry the both side till golden brown.
  • Now soak each “Amaalu” into the sugar syrup at a time for 1-2 minutes and take it out from the syrup and place on a plate.
